PIZZA, MOLDED GELATIN AND CARROT CAKE

Today I will be posting some of the food I have cooked this weekend. As usual, I've helped a friend cooked up a feast to Celebrate Fathers Day with her closest family. Apparently the lunch was a success and the chocolate cake I have done was the attraction of the day... This cake picture will be coming later as we didn't have a digital camera at the moment to take photos, so I took with an old camera that was available, so we will be forced to use the "old way" of photo development which will take a few days! Below is a "fast pizza" I make with wholemeal Lebanese bread. I spread some homemade tomato sauce on top, add some chopped capsicum, onion, ham and top all with grated cheese. Bake in hot oven until cheese is melted. It is very tasty and crunchy! A very good alternative for those who don't know or doesn't have the time to make dough the traditional way.

LEBANESE BREAD PIZZA



This was one of desserts my friend served for her family. We did a big batch, so I was able to take home a small dish with me... Husband and kids loved!

Make 3 or 4 jelly packets using half of the water asked. Let it set and them cut them into little cubes. Put all cubed jelly into a big bowl. Boil 200 ml of pineapple juice and mix with 1 1/2 packet of unflavored gelatin until gelatin is dissolved. Add to this juice another 175 ml of pineapple juice. Let it cool a bit and add 150 ml of light thickened cream to juice and mix well. Pour cream mixture into cubed gelatins and put into a oiled tray (any shape will do) and let it set for at least 4 hours or overnight. Turn tray upside down and unmold the gelatin.

FANTASY GELATIN



To say thank you for my help, she baked me this wonderful carrot cake. It is divine and I never ever ate a carrot cake so moist and delicious as this one. I totally recommend you to do... The recipe is:

3 cups plain flour, 2 cups sugar, 1 1/2 cup vegetable oil, 4 eggs, 1 tsp salt, 1 1/2 tsp baking powder, 2 tsp cinnamon, pinch vanilla, 2 cups grated carrot, 440gr canned crushed pineapple and 2 handful of crushed walnuts.

Basically you sift dry ingredients in a bowl. Mix wet ingredients in another bowl. Pour wet mixture into dry ingredients and mix with cake mixer until all blended. Add carrot and walnut, put it into a greased baking dish and bake for 1 hour (190 degrees Celsius). Wait cake cook a little before turn into a serving dish. Sprinkle crushed pistachio on top of cake. YUMMY....MMMMM....
